JOB SUMMARY

The Pastry Chef represents the restaurant with the highest levels of hospitality, professionalism, and sanitation safety. The Pastry Chef will collaborate with the Executive Chef in the running and management of the pastry program and kitchen for Toca Madera Houston. The Pastry Chef will be comfortable working under pressure. They will plan and execute a range of daily tasks, and ensure that the kitchen produces consistent exemplary desserts, recipes and techniques while simultaneously fostering a healthy, happy work environment.

KNOWLEDGE, SKILLS & ABILITIES

· Knowledge of advanced pastry techniques and tools

· Prior experience with laminated dough, cakes, ice cream, chocolate, and sugar work

· Exceptional culinary technique and knowledge of different flavor profiles

· Able to multitask and lead a team in a fast-paced, high-pressure environment

· Able to think and act quickly and effectively while retaining self-composure

· Create and uphold a positive and respectful work environment

· Comfortable and effective at giving direction

· Has excellent communication, time management, and organizational skills

· Commitment to cleanliness and professionalism

· Must demonstrate appropriate workplace behavior and treat all employees with respect

KEY RESPONSIBILITIES

•Personnel Management

· Act as a mentor for all kitchen employees, assisting and developing their training

· Manage scheduling and labor controls

· Manage team communication – i.e., meetings, feedback, and scheduling

· Train new and existing kitchen staff on the preparation, arrangement, and plating of dishes

· Liaise with the FOH management team to ensure efficient restaurant operations

· Oversee kitchen operations in accordance with Noble 33 standards

· Oversee the the line, ensuring dessert station and mise en place are up to standards

· Create pastry production SOPs and samples food to ensure compliance with recipes and standards

· Committed to sustainability, particularly as it relates to product sourcing

· Manage inventory: estimates needs, places orders, receives and checks deliveries

· Inform front of house personnel of dessert menu changes, specials and shortages

· Execute menu items from start to finish, ensuring quality is always maintained

· Ensure all staff members adhere to culinary standards and regulations

HEALTH & SAFETY

· Adhere to the highest standards of food safety, food handling, sanitation, workplace safety, and hygiene requirements according to the Department of Health standards to ensure the health and safety of team members and guests

· REQUIREMENTS

· Food Handler Card

· Must be punctual and reliable

· Must be available to work nights, weekends, and holidays

WORK ENVIRONMENT

· Involves standing and walking the entire shift

· Involves holding objects with hands

· Involves reaching, bending, and stooping frequently

· Involves lifting, moving, and carrying at least 50 pounds with frequency throughout shift

LANGUAGE

• Ability to speak multiple languages, including English and Spanish, is preferred

EXPERIENCE

• Must have 2 years previous experience
