Description
Tavern62 by David Burke is a modern American tavern, situated in New York City’s Upper East Side. The menu features American plates as a reflection of Chef Burke’s contemporary approach to cooking, with a nod to elevated New York classics paired with a curated wine list, craft beers and a specialty cocktail program.

The Sommelier is responsible for developing and maintaining all beverage, spirit, specialty cocktails and wine lists. The Sommelier may be asked to assist management in staff training to insure proper service of wine and all other beverages in accordance with our standards as outlined in the service manual. The Sommelier communicates all changes of offerings and keeps written materials up to date, maintains the beverage storeroom, and verifies all alcoholic beverage deliveries.

Position Requirements:
• Adhere to company policy & procedures set forth in the Welcome Guide.
• Adhere to the “Steps of Service” as outlined in the service manual.
• Help develop and maintain beverage, spirit, specialty cocktails and wine lists.
• Create and maintain a beverage list that meets the goals set by management.
• Update wine list on a daily basis.
• Maintain a wine list appropriate for banquets.
• Meet goal for inventory levels in both dollars and number of bottles.
• Maintain organized and clean beverage storeroom.
• Ensure that all alcoholic beverage deliveries are checked in.
• Verify all alcoholic beverage invoices.
• Ensure all alcoholic beverage are put in proper bins promptly.
• Process all invoices in a timely manner, following up on any billing disputes.
• Order all beverages.
• Conduct regular physical inventory of all alcoholic beverages.
• Ensure that all security controls are adhered to.
• Sets proper beverage controls in conjunction with the General Manager and ensure they are adhered to.
• Make changes to wines in POS system as necessary.
• Maintain perpetual inventory.
• Detect theft or abuse.
• Be fluent in the use of the POS system.
• Have detailed knowledge of the menu. Stay abreast of menu changes.
• Adhere to your work schedule.
• Adhere to the restaurant grooming, uniform, and hygiene standards.
• Act professional and accommodating and always maintain your composure.
• Serve alcohol responsibly.

During Service:
• Take all guests’ wine orders and serve wine as necessary.
• Interact with guests. Exemplify the art of suggestive selling.
• Be personally involved with the service of VIP and journalist’s tables.
• Serve as the identifiable representative of BLT’s food, wine, beverage and warm atmosphere.
• Take the extra step to turn good service into great service and make it a memorable experience.

Communication:
• Communicate with your Managers. Identify and report problems immediately.
• Communicate with your station teams and prioritize all your station’s needs.
• Know how and when to provide information that the guest needs, wants and does not yet know
he/she wants, tactfully and with confidence.
• Be able to answer general questions about the company (E2 Hospitality), restaurant hours and its reservation policies.
