Description
Primary duties and responsibilities include, but are not limited to, the following:
• The chef of the store/ BOH manager must lead the Kitchen Team in accurately and efficiently cooking meats, fish, veggies, sauces, and other hot foods.
• Must accurately prepare and portion all food items based on direction.
• The chef/BOH manager must be responsible for working quickly and efficiently to support the team and ensure that the Executive Chef’s standards are maintained.
• Responsible for Schedule of all BOH associates (2 weeks at a time).
• Hiring and Firing of all BOH associates (Executive Chef has final approval).
• Responsible for Ordering effectively and efficiently. (Produce everyday, Meats 3xWeek, Dry goods 2xWeek).
• Responsible for all disciplinary actions needed for BOH. (3 strike rule and necessary documentation.)
• Responsible for making sure all associates adhere to California Labor Laws (30 min breaks, and offering 2x10min breaks for every 8 hour shift).

Other duties include, but are not limited to, the following:
• Be a team player, and find ways to serve the team. Promote team work. Think like you are a coach!
• Make sure all co-workers are dressed appropriately according to uniform policies.
• Communicate clearly and effectively with other associates.
• Lead by example, working quickly and efficiently, respecting the ingredients and your fellow associates.
• Take the temperature of hot and cold food (Time Stamps) on the line, as well as in the refrigerator units and walk-in. Make sure that the sanitizer buckets are placed in their proper positions and that the solutions are correct.
• Oversee prep list is completed efficiently and according to the standard of the Executive Chef. Ensure proper cooling with Time Stamps.
• Make sure that proper sanitation is being practiced and maintained throughout the kitchen.
• Provide support to the line by replenishing mise and making sure the line is properly setup for the next day.
• Make sure product is not bein
